Feather-light batter around shrimp and vegetables, fried until lacy and pale gold — Japanese frying at its most elegant.

Ingredients
- Saltpinch

- All-Purpose Flour1 cup
- Soy Sauce3 tbsp for dipping
- Shrimp12 large, peeled
- Eggplant1/2, sliced
- Zucchini1, sliced
- Sweet Potato1, sliced
- Neutral Oilfor deep frying
- Mirin2 tbsp for dipping
- Kombu Dashi1/2 cup for dipping
Optional extras
- Daikon Radish1/4 cup grated
Instructions

Pat shrimp and sliced vegetables very dry; chill.

Whisk ice-cold water into flour lightly — lumps are fine; keep batter cold.

Heat neutral oil to 170–180°C.

Dip pieces, shake off excess, and fry in small batches until just pale gold.

Drain on a rack; serve immediately with tentsuyu-style soy-dashi dip and grated daikon.
Chef's tip
Ice-cold, under-mixed batter and not overcrowding the oil are the whole secret.
