Miso Soup

Silky miso broth with soft tofu, wakame and spring onions — the everyday Japanese soup that starts almost every meal.

Ingredients
- Spring Onions2, thinly sliced
- Tofu200 g soft, cubed
- Kombu Dashi4 cups
- Miso Paste3–4 tbsp
- Wakame Seaweed2 tbsp dried
Optional extras
- Saltpinch if needed
- Soy Sauce1 tsp optional
Instructions

Soak wakame in water until rehydrated; drain.

Warm kombu dashi gently — do not boil hard.

Add cubed tofu and wakame; heat through 2 minutes.

Turn off heat; whisk in miso paste until dissolved (never boil after adding miso).

Ladle into bowls and top with sliced spring onions.
Chef's tip
Boiling after miso goes in kills aroma and can make the soup cloudy and bitter.
