Crispy outside, custardy inside octopus balls from Osaka — brushed with sauce, mayo and spring onions.

Ingredients
- Salt1/2 tsp
- Eggs2
- All-Purpose Flour1.5 cups
- Spring Onions3, minced
- Mayonnaise2 tbsp
- Neutral Oilfor the pan
- Octopus200 g, diced
- Tonkatsu Sauce3 tbsp
- Kombu Dashi2 cups
Optional extras
- Ginger1 tsp minced optional
Instructions

Whisk flour, dashi and egg into a pourable batter; rest 10 minutes.

Heat and oil a takoyaki pan (or round muffin wells carefully).

Pour batter, add diced octopus, spring onion and a scrap of pickled ginger if you have it.

Turn with picks as bottoms set until round and golden all over.

Brush with tonkatsu sauce, drizzle mayo, top with spring onions and serve hot.
Chef's tip
Turn early and often — the custardy center needs the spheres to seal before they fully cook.
