Panko-crusted pork cutlet fried deep gold and sliced over shredded cabbage with thick tonkatsu sauce — izakaya comfort.

Ingredients

  • Salt1 tsp
  • Eggs2, beaten
  • All-Purpose Flour1/2 cup
  • Cabbage3 cups shredded
  • Pork3 loin cutlets
  • Neutral Oilfor frying
  • Panko Breadcrumbs2 cups
  • Tonkatsu Sauce1/3 cup
  • Black Pepper1/2 tsp

Optional extras

  • Lemon1, wedges

Instructions

    Pound pork loin to even thickness; season with salt and pepper.

    Dredge in flour, dip in beaten egg, then press into panko.

    Fry at 170°C until deep gold and cooked through, about 5–7 minutes.

    Rest 2 minutes; slice into strips.

    Serve with shredded cabbage, lemon and tonkatsu sauce.

Chef's tip

Let the breaded cutlets rest 5 minutes before frying so the coating sticks.
