Sweet-savory rolled Japanese omelette with tidy layers — bento-box gold that takes practice and a good pan.

Ingredients

  • Saltpinch
  • Eggs4
  • Soy Sauce1 tsp
  • Sugar1 tsp
  • Neutral Oil1 tbsp
  • Mirin1 tbsp
  • Kombu Dashi2 tbsp

Instructions

    Beat eggs with a splash of dashi, mirin, soy and a pinch of sugar.

    Oil a square (or round) pan over medium-low.

    Pour a thin layer; when almost set, roll to one side.

  4. 4

    Oil again; pour another layer under the roll; roll up; repeat.

  5. 5

    Rest, slice into bite-size pieces, and serve.

Chef's tip

Medium-low heat — too hot and the layers brown before they roll cleanly.
