Agedashi Tofu

Crispy fried tofu in a warm tentsuyu broth with grated daikon and spring onions — the izakaya starter vegetarians order twice.

Ingredients

  • Spring Onions2, sliced
  • Soy Sauce3 tbsp
  • Tofu400 g firm
  • Neutral Oilfor frying
  • Mirin2 tbsp
  • Daikon Radish1/3 cup grated
  • Potato Starch1/2 cup
  • Kombu Dashi1.5 cups

Optional extras

  • Saltpinch
  • Ginger1 tsp grated optional

Instructions

    Press tofu to remove water; cut into cubes; coat in potato starch.

    Fry in hot oil until light gold and crisp; drain.

  3. 3

    Warm dashi with soy and mirin into a light tentsuyu.

  4. 4

    Place tofu in bowls; pour hot broth around (not drowning the crust).

  5. 5

    Top with grated daikon and spring onions.

Chef's tip

Dry tofu thoroughly — wet cubes steam instead of crisping.
