Pleated pork-and-cabbage dumplings pan-fried into crisp golden skirts — Japan's favorite weekend project.

Ingredients
- Salt1 tsp
- Garlic3 cloves, minced
- Ginger1 tbsp minced
- Cabbage2 cups finely chopped
- Soy Sauce2 tbsp + more for dip
- Sesame Oil1 tbsp
- Ground Pork400 g
- Dumpling Wrappers40
- Rice Vinegar2 tbsp for dip
- Neutral Oil2 tbsp
Optional extras
- Spring Onions2, minced
- Black Pepper1/2 tsp
Instructions

Salt and squeeze shredded cabbage dry; mix with ground pork, garlic, ginger, soy and sesame oil.

Fill dumpling wrappers; pleat and seal with water.

Arrange in an oiled nonstick pan; fry bottoms until gold.

Add a splash of water; cover to steam 4–5 minutes.

Uncover to re-crisp; serve with soy-vinegar dipping sauce.
Chef's tip
Squeeze the cabbage hard — watery filling bursts the wrappers.
