Soy-ginger marinated chicken fried twice for a shatter-crisp crust — Japanese fried chicken that needs only lemon.

Ingredients
- Chicken700 g thighs, bite-size
- Salt1/2 tsp
- Garlic3 cloves, minced
- Ginger1 tbsp grated
- Lemon1, wedges
- Soy Sauce3 tbsp
- Neutral Oilfor deep frying
- Sake1 tbsp
- Potato Starch1 cup
Optional extras
- Mayonnaisefor serving
- Black Pepper1/2 tsp
Instructions

Marinate chicken pieces in soy, ginger, garlic and a splash of sake 20–30 minutes.

Toss in potato starch (or cornstarch) until well coated.

Fry at 160°C for 4–5 minutes; rest.

Fry again at 180°C 1–2 minutes until deep gold.

Serve with lemon wedges and mayo.
Chef's tip
The double fry is what makes karaage glassy — don't skip the rest between fries.
