Cluster-bean (gorikayi) baath — tender beans in a dry spice masala folded into rice. A Kannada home-style variety rice.

Ingredients
- Saltto taste
- Onion1, sliced
- Coriander Powder1 tsp
- Turmeric Powder1/2 tsp
- Vegetable Oil2 tbsp
- Rice3 cups cooked
- Urad Dal1 tsp
- Mustard Seeds1 tsp
- Curry Leaves1 sprig
- Green Beans250 g cluster beans or green beans, chopped
- Red Chili Powder1 tsp
- Grated Coconut1/4 cup
Optional extras
- Fresh Cilantro2 tbsp
Instructions

String and chop cluster beans / green beans; parboil until just tender.

Temper mustard, urad and curry leaves; sauté onion and beans.

Add turmeric, chili and coriander powders; cook dry and fragrant.

Fold through cooked rice with salt and grated coconut.

Finish with cilantro.
Chef's tip
Parboil beans separately so the rice never turns watery.
