One-pot sambar baath — toor dal, tamarind and vegetables cooked into the rice so every spoonful is gravy-soaked comfort.

Ingredients
- Saltto taste
- Onion1, chopped
- Tomato1, chopped
- Ghee2 tbsp
- Coriander Powder1 tbsp
- Turmeric Powder1/2 tsp
- Rice2 cups cooked (or 1 cup raw)
- Mustard Seeds1 tsp
- Curry Leaves1 sprig
- Yellow Lentils (Toor Dal)3/4 cup
- Asafoetidapinch
- Tamarind Paste2 tbsp
- Red Chili Powder1 tsp
Optional extras
- Carrot1, cubed optional
- Green Beans1/2 cup chopped
Instructions

Pressure-cook toor dal until soft; mash lightly.

Sauté onion, tomato and mixed vegetables with sambar-style spices (coriander, chili, turmeric).

Add tamarind water, dal and enough water; simmer.

Stir in cooked rice (or raw rice to finish cooking in the sambar).

Temper mustard, curry leaves and dried chili in ghee; pour over and mix.
Chef's tip
Hotel-style is slightly loose — add hot water if it tightens as it sits.
