Ellu / yellu baath — nutty roasted sesame seed powder coating rice with a gentle chili kick. Temple prasadam energy.

Ingredients
- Saltto taste
- Vegetable Oil2 tbsp
- Rice3 cups cooked, cooled
- Urad Dal1 tsp
- Mustard Seeds1 tsp
- Curry Leaves1 sprig
- Dried Red Chilies3
- Sesame Seeds1/2 cup
Optional extras
- Asafoetidapinch
- Jaggery1/2 tsp optional
Instructions

Dry-roast sesame seeds until they pop and smell nutty; cool and grind with dried red chili and salt.

Temper mustard, urad dal and curry leaves in oil.

Toss cooled rice with sesame powder and the tempering.

Adjust salt; optional jaggery pinch for balance.

Serve with plain yogurt.
Chef's tip
Don't burn the sesame — bitter powder ruins the batch. Roast on low-medium.
