
Kathal ki Bhaaji
Young jackfruit slow-cooked with potato and ginger, the vegetarian meat of North India. A one-pan weeknight sabzi that asks for little and gives a lot. Pile beside phulka and a bowl of cooled yogurt.
Ingredients
- Ginger Garlic Paste1 tbsp
- Garam Masala1/2 tsp
- Saltto taste
- Onion1, finely chopped
- Tomato2, chopped
- Ginger2-inch piece
- Green Chili1-2, slit
- Cumin Seeds1 tsp
- Coriander Powder1 tsp
- Turmeric Powder1/2 tsp
- Vegetable Oil2 tbsp
- Potato3 medium, cubed
- Lemon1
- Red Chili Powder1 tsp
- Jackfruit500 g, raw and cubed
Optional extras
- Fresh Cilantro2 tbsp, chopped
Instructions

Wash and cut the jackfruit into even, bite-size pieces so everything cooks at the same pace.

Heat oil in a wide kadhai and crackle cumin seeds; fry the onions till lightly golden.

Tip in the ginger garlic paste and green chilies, then the spices — fry until the oil separates at the edges.

Turn the jackfruit through the masala with the potato, clamp on a lid and let the steam work — check after 10 minutes.

Kill the heat, stir through the cilantro and the ginger, and rest five minutes before serving.
Chef's tip
Fresh spices make the dish — if yours smell of nothing, the dish will taste of nothing.
