Kamal Kakdi ki Sabzi
Crunchy lotus stem tossed with potato and tangy amchur, a winter delicacy. The kind of homely bhaji that disappears fastest off the thali. Pile beside phulka and a bowl of cooled yogurt.
Ingredients
- Ginger Garlic Paste1 tbsp
- Garam Masala1/2 tsp
- Saltto taste
- Onion1, finely chopped
- Tomato2, chopped
- Green Chili1-2, slit
- Cumin Seeds1 tsp
- Coriander Powder1 tsp
- Turmeric Powder1/2 tsp
- Vegetable Oil2 tbsp
- Potato3 medium, cubed
- Ajwain1 tsp
- Red Chili Powder1 tsp
- Lotus Root200 g, sliced
- Amchur (Dry Mango Powder)1 tsp
Optional extras
- Fresh Cilantro2 tbsp, chopped

Wash and cut the lotus root into even, bite-size pieces so everything cooks at the same pace.

Heat oil in a wide kadhai and crackle cumin seeds; fry the onions till lightly golden.

Add ginger garlic paste, cook out the raw smell, then bloom the turmeric, chili and coriander in the oil.

Add the lotus root and the potato, toss to coat in the masala, cover and cook on low, stirring twice, until tender.

Kill the heat, stir through the cilantro and the amchur (dry mango powder), and rest five minutes before serving.
Chef's tip
Taste as you go — chili heat, salt and sourness should all lift each other, not fight.
