
Seb ki Sabzi
Banarasi apple curry with fennel and jaggery, sweet-spiced and surprising. Simple, spiced straight-talk food — no gravy to hide behind. Pile beside phulka and a bowl of cooled yogurt.
Ingredients
- Ginger Garlic Paste1 tbsp
- Garam Masala1/2 tsp

- Onion1, finely chopped
- Tomato2, chopped
- Green Chili1-2, slit
- Cumin Seeds1 tsp
- Coriander Powder1 tsp
- Turmeric Powder1/2 tsp
- Vegetable Oil2 tbsp
- Lemon1
- Red Chili Powder1 tsp
- Apple2 cups, chopped
- Jaggery3/4 cup, grated
- Fennel Seeds1 tsp
Optional extras
- Fresh Cilantro2 tbsp, chopped

Pat the apple dry and chop it into similar-sized chunks — dry surfaces brown better.

Heat oil in a wide kadhai and crackle cumin seeds; fry the onions till lightly golden.

Add ginger garlic paste, cook out the raw smell, then bloom the turmeric, chili and coriander in the oil.

Turn the apple through the masala with the jaggery, clamp on a lid and let the steam work — check after 10 minutes.

Kill the heat, stir through the cilantro and the fennel seeds, and rest five minutes before serving.

A pinch of sugar balances tomatoes that lean too sharp.
