
Papite ki Sabzi
Raw papaya and potato bhaaji, firm, peppery and underrated. Simple, spiced straight-talk food — no gravy to hide behind. Serve hot with rotis, dal and a wedge of lemon.
Ingredients
- Ginger Garlic Paste1 tbsp
- Garam Masala1/2 tsp
- Saltto taste
- Onion1, finely chopped
- Tomato2, chopped
- Green Chili2
- Cumin Seeds1 tsp
- Coriander Powder1 tsp
- Turmeric Powder1/2 tsp
- Vegetable Oil2 tbsp
- Potato3 medium, cubed
- Lemon1
- Red Chili Powder1 tsp
- Green Papaya2 cups, chopped
Optional extras
- Fresh Cilantro2 tbsp, chopped
Instructions

Pat the green papaya dry and chop it into similar-sized chunks — dry surfaces brown better.

Heat oil in a wide kadhai and crackle cumin seeds; fry the onions till lightly golden.

Stir in ginger garlic paste and green chili; after a minute add the ground spices with a splash of water so they don't scorch.

Fold in the green papaya with the potato, sprinkle in a tablespoon of water, cover and steam until just done.

Uncover, raise the heat for two minutes to dry off any liquid, then shower with cilantro and a squeeze of lemon.
Chef's tip
Roasted peanut powder stirred in at the end adds body without cream.
