
Aloo Chokha
Smoked mashed potato with raw onion and mustard oil, Bihar on a plate. Simple, spiced straight-talk food — no gravy to hide behind. Pile beside phulka and a bowl of cooled yogurt.
Ingredients
- Ginger Garlic Paste1 tbsp
- Garam Masala1/2 tsp
- Saltto taste
- Onion1, finely chopped
- Tomato2, chopped
- Green Chili2
- Cumin Seeds1 tsp
- Coriander Powder1 tsp
- Turmeric Powder1/2 tsp
- Vegetable Oil2 tbsp
- Potato3 medium, cubed
- Red Onion1, thinly sliced
- Red Chili Powder1 tsp
- Mustard Oil1 tsp
Optional extras
- Fresh Cilantro2 tbsp, chopped
Instructions

Pat the potato dry and chop it into similar-sized chunks — dry surfaces brown better.

Warm the oil, add cumin and a pinch of asafoetida, then the onions — cook till bronzed at the edges.

Stir in ginger garlic paste and green chili; after a minute add the ground spices with a splash of water so they don't scorch.

Add the potato and the red onion, toss to coat in the masala, cover and cook on low, stirring twice, until tender.

Kill the heat, stir through the cilantro and the mustard oil, and rest five minutes before serving.
Chef's tip
Roasted peanut powder stirred in at the end adds body without cream.
