Rajasthani Mathri
Flaky mathri with kasuri methi, the tea companion of North India. Chaotic in the best way: every bite hits a different note. Eat immediately, standing up, ideally with friends.
Ingredients
- Saltto taste
- Onion1, finely chopped
- Green Chili1-2, finely chopped
- Ghee3 tbsp
- Fenugreek Seeds1 tsp
- Lemon1
- All-Purpose Flour2 cups
- Chaat Masala1 tsp
- Roasted Cumin1 tsp
- Black Pepper1 tsp
Optional extras
- Fresh Cilantro2 tbsp, chopped
Instructions
- 1
Set out everything mise-en-place: this is assembly food, and it moves fast once you start.
- 2
Handle the cooked component with care; the contrast of textures is what makes street food sing.
- 3
Spoon over the chutneys and yogurt in wide ribbons across the whole surface, not the middle.
- 4
Season aggressively — street vendors' hands are heavy with masala, and yours should be too.
- 5
Garnish with the fenugreek seeds, a final dusting of chaat masala and serve within minutes, eating straight from the plate.
Chef's tip
Taste the layers as you build — every bite should surprise.
