Delhi Shakarkandi Chaat
Delhi winter's roasted sweet potato chaat, lime and masala heavy. Sweet, sour, spicy, crunchy and cold in the same mouthful — chaat logic. Eat at once — chaat has a five-minute window of glory.
Ingredients
- Yogurt1 cup, whisked
- Saltto taste
- Lemon1
- Tamarind Paste2 tbsp
- Chaat Masala1 tsp
- Red Chili Powder1/2 tsp
- Roasted Cumin1 tsp
- Sweet Potato2, cubed
Optional extras
- Fresh Cilantro2 tbsp, chopped
- Pomegranate Seeds1/2 cup
Instructions
- 1
Get the base ready — cooked, cooled and ideally at room temperature so the toppings sit proud.
- 2
Whisk the yogurt smooth with a pinch of sugar and salt — it should pour slowly off the spoon.
- 3
Layer the cooked base, then drizzle the green and tamarind chutneys in crossing lines.
- 4
Flood the plate with yogurt, then season hard — masala from a height falls evenly.
- 5
Top with the chaat masala, pomegranate seeds and fresh coriander; serve within five minutes, fork optional.
Chef's tip
Taste as you go — chili heat, salt and sourness should all lift each other, not fight.
