Surti Khandvi
Silky gram flour rolls, Gujarat's most technical snack. The flavours of an Indian market at dusk, built on a plate. Serve in paper plates for the full street experience.
Ingredients
- Yogurt2 cups, whisked
- Saltto taste
- Onion1, finely chopped
- Green Chili1-2, finely chopped
- Mustard Seeds1 tsp
- Lemon1
- Gram Flour1 cup
- Chaat Masala1 tsp
- Roasted Cumin1 tsp
- Grated Coconut1 cup
Optional extras
- Fresh Cilantro2 tbsp, chopped

Prep the components first — chopped onions, chutneys, spice mixes in reach — because street food waits for nothing.

Cook the base element — boil, fry or toast it — till it is exactly right; texture is the whole story here.

Spoon over the chutneys and yogurt in wide ribbons across the whole surface, not the middle.

Shower with the dry elements: chaat masala, roasted cumin, chili, and the crunchy topping — do this at the last second so it stays loud.

Scatter the yogurt and cilantro, add one more drag of chutney, and put it in front of someone immediately.

Fresh spices make the dish — if yours smell of nothing, the dish will taste of nothing.
