
Maharashtrian Chivda
Thin poha chivda with peanuts and raisins, Diwali faral standard. The flavours of an Indian market at dusk, built on a plate. Serve in paper plates for the full street experience.
Ingredients

- Green Chili1-2, finely chopped
- Curry Leaves2 sprigs

- Peanuts1/2 cup, roasted
- Chaat Masala1 tsp
- Roasted Cumin1 tsp
- Flattened Rice (Poha)2 cups, thick variety

- Fresh Cilantro2 tbsp, chopped
- Golden Raisins2 tbsp

Lay out your stations like a busy stall: one for chopping, one for cooking, one for building.

Cook the base element — boil, fry or toast it — till it is exactly right; texture is the whole story here.

Layer on the wet elements — chutneys, yogurt, gravies — generously; restraint is for restaurants.

Shower with the dry elements: chaat masala, roasted cumin, chili, and the crunchy topping — do this at the last second so it stays loud.
