
Amritsari Matar Kulcha
Delhi's white-pea matar with tandoori kulcha, morning-walk reward. The flavours of an Indian market at dusk, built on a plate. Serve in paper plates for the full street experience.
Ingredients

- Green Chili1-2, finely chopped
- Lemon1
- All-Purpose Flour2 cups
- Chaat Masala1 tsp
- Roasted Cumin1 tsp
- Yellow Split Peas1 cup

Lay out your stations like a busy stall: one for chopping, one for cooking, one for building.

Get the base going: crisp what should be crisp, soft what should be soft.

Layer on the wet elements — chutneys, yogurt, gravies — generously; restraint is for restaurants.

Dust the spices from a height so they fall evenly, then bury it under the crunch.

Finish with the all-purpose flour, one last pinch of masala, and serve before the crunch softens.
Chef's tip
Chutneys make the chaat — thin tamarind and bright green, both homemade if possible.
