
Tokri Chaat
The edible fried basket chaat, structural engineering with chutney. Yogurt-flooded, chutney-streaked and unapologetically messy. Serve immediately with small plates and no judgement.
Ingredients
- Yogurt2 cups, whisked
- Saltto taste
- All-Purpose Flour2 cups
- Tamarind Paste2 tbsp
- Mixed Vegetables2 cups, chopped
- Chaat Masala1 tsp
- Red Chili Powder1/2 tsp
- Roasted Cumin1 tsp
Optional extras
- Fresh Cilantro2 tbsp, chopped
Instructions

Boil, fry or toast the base component until the texture is right; cool what needs cooling so the yogurt doesn't slump.

Sweeten and salt the whisked yogurt; street stalls lean sweeter than you'd think.

Arrange the base on the plate and spoon the chutneys across — green for bite, tamarind for sweetness.

Flood the plate with yogurt, then season hard — masala from a height falls evenly.

Bury it under the all-purpose flour, add the jewelled garnish, and get it to the table while everything still crackles.
Chef's tip
Black salt and roasted cumin powder are the chaat backbone.
