Jhal Muri
Kolkata's jhal muri — puffed rice shaken loud with mustard oil and lime. The plate where India keeps all of its favourite textures at once. Serve immediately with small plates and no judgement.
Ingredients
- Yogurt1 cup, whisked
- Saltto taste
- Green Chili2
- Peanuts1/2 cup, roasted
- Tamarind Paste2 tbsp
- Chaat Masala1 tsp
- Red Chili Powder1/2 tsp
- Mustard Oil1 tsp
- Roasted Cumin1 tsp
- Puffed Rice (Murmura)4 cups
Optional extras
- Fresh Cilantro2 tbsp, chopped
Instructions
- 1
Prep the crunchy and the soft components in separate bowls; assembly takes four minutes flat.
- 2
Beat the yogurt till pourable and gloss-free; lumpy yogurt ruins an otherwise perfect chaat.
- 3
Spread the base out flat and drag both chutneys across it in ribbons.
- 4
Flood the plate with yogurt, then season hard — masala from a height falls evenly.
- 5
Bury it under the peanuts, add the jewelled garnish, and get it to the table while everything still crackles.
Chef's tip
If the masala sticks, add water a tablespoon at a time rather than drowning the dish.
