Bangalore masala puri, crushed papdi drowned in green-pea gravy. Sweet, sour, spicy, crunchy and cold in the same mouthful — chaat logic. Serve immediately with small plates and no judgement.

Ingredients

  • Yogurt1 cup, whisked
  • Saltto taste
  • Onion2, finely sliced
  • Lemon1
  • Tamarind Paste2 tbsp
  • Chaat Masala1 tsp
  • Red Chili Powder1/2 tsp
  • Roasted Cumin1 tsp
  • Yellow Split Peas1 cup

Optional extras

  • Fresh Cilantro2 tbsp, chopped

Instructions

    Boil, fry or toast the base component until the texture is right; cool what needs cooling so the yogurt doesn't slump.

    Sweeten and salt the whisked yogurt; street stalls lean sweeter than you'd think.

    Layer the cooked base, then drizzle the green and tamarind chutneys in crossing lines.

    Flood the plate with yogurt, then season hard — masala from a height falls evenly.

    Bury it under the chaat masala, add the jewelled garnish, and get it to the table while everything still crackles.

Chef's tip

If the masala sticks, add water a tablespoon at a time rather than drowning the dish.
