
Peanut Chaat
Boiled peanut chaat with onion and lime, bar counter's quiet star. Sweet, sour, spicy, crunchy and cold in the same mouthful — chaat logic. Eat at once — chaat has a five-minute window of glory.
Ingredients
- Yogurt1 cup, whisked
- Saltto taste
- Lemon1
- Peanuts1/2 cup, roasted
- Tamarind Paste2 tbsp
- Red Onion1, thinly sliced
- Chaat Masala1 tsp
- Red Chili Powder1/2 tsp
- Roasted Cumin1 tsp
Optional extras
- Fresh Cilantro2 tbsp, chopped

Get the base ready — cooked, cooled and ideally at room temperature so the toppings sit proud.

Whisk the yogurt smooth with a pinch of sugar and salt — it should pour slowly off the spoon.

Layer the cooked base, then drizzle the green and tamarind chutneys in crossing lines.

Cover the base with yogurt and let it pool at the edges before the spice shower.

Finish with the red onion, a final pinch of black salt and serve at once.
Chef's tip
Don't crowd the pan; steam is the enemy of the browning that builds flavour.
