
Masala Corn Chaat
Sweet corn chaat with butter and lime, five-minute monsoon snack. Sweet, sour, spicy, crunchy and cold in the same mouthful — chaat logic. Perfect as an evening snack with masala chai nearby.
Ingredients
- Yogurt1 cup, whisked
- Butter3 tbsp
- Saltto taste
- Lemon1
- Tamarind Paste2 tbsp
- Chaat Masala1 tsp
- Red Chili Powder1/2 tsp
- Roasted Cumin1 tsp
- Corn2 cups
Optional extras
- Fresh Cilantro2 tbsp, chopped

Prep the crunchy and the soft components in separate bowls; assembly takes four minutes flat.

Beat the yogurt till pourable and gloss-free; lumpy yogurt ruins an otherwise perfect chaat.

Spread the base out flat and drag both chutneys across it in ribbons.

Flood the plate with yogurt, then season hard — masala from a height falls evenly.

Top with the butter, pomegranate seeds and fresh coriander; serve within five minutes, fork optional.
Chef's tip
If the masala sticks, add water a tablespoon at a time rather than drowning the dish.
