
Bara
Odia urad bara, spongy vada that drinks dahi like a sponge. Hot oil, thick batter, monsoon weather optional — India's favourite snack format. Best with green chutney and a rain outside.
Ingredients
- Ginger Garlic Paste1 tsp
- Saltto taste
- Onion2, finely sliced
- Ginger2-inch piece
- Green Chili2
- Turmeric Powder1/2 tsp
- Vegetable Oilfor deep frying
- Urad Dal2 cups, chopped
- Asafoetidaa pinch
- Gram Flour1 cup
- Ajwain1/2 tsp
- Rice Flour2 tbsp
Instructions

Make the batter: whisk the urad dal with the onion, gram flour, salt and just enough water for a thick, clinging consistency.

Heat oil for deep-frying to 175C — a crumb of batter should rise immediately, fizzing, without darkening fast.

Slide the batter in with two spoons — rough, craggy shapes fry crispest.

Cook three to four minutes a side until the sizzle quietens, then drain on a wire rack.

Eat immediately — a fritter's glory is measured in minutes.
Chef's tip
Second-fry for 30 seconds at higher heat if feeding a crowd.
