
Chukandar ka Chaat
Beetroot chaat, ruby cubes with mint and lime. Sweet, sour, spicy, crunchy and cold in the same mouthful — chaat logic. Serve immediately with small plates and no judgement.
Ingredients
- Yogurt1 cup, whisked
- Saltto taste
- Lemon1
- Tamarind Paste2 tbsp
- Chaat Masala1 tsp
- Red Chili Powder1/2 tsp
- Roasted Cumin1 tsp
- Beetroot2, grated
Optional extras
- Mint Leaves1/4 cup
- Fresh Cilantro2 tbsp, chopped

Boil, fry or toast the base component until the texture is right; cool what needs cooling so the yogurt doesn't slump.

Beat the yogurt till pourable and gloss-free; lumpy yogurt ruins an otherwise perfect chaat.

Arrange the base on the plate and spoon the chutneys across — green for bite, tamarind for sweetness.

Cover the base with yogurt and let it pool at the edges before the spice shower.

Top with the chaat masala, pomegranate seeds and fresh coriander; serve within five minutes, fork optional.
