Banarasi Tamatar Chaat

Banaras' tomato chaat, mashed tomatoes under a spice blizzard. The plate where India keeps all of its favourite textures at once. Perfect as an evening snack with masala chai nearby.

Ingredients

  • Yogurt1 cup, whisked
  • Saltto taste
  • Tomato3, chopped
  • Lemon1
  • Tamarind Paste2 tbsp
  • Chaat Masala1 tsp
  • Red Chili Powder1/2 tsp
  • Pomegranate Seeds1/2 cup
  • Roasted Cumin1 tsp

Optional extras

  • Fresh Cilantro2 tbsp, chopped

Instructions

    Boil, fry or toast the base component until the texture is right; cool what needs cooling so the yogurt doesn't slump.

    Whisk the yogurt smooth with a pinch of sugar and salt — it should pour slowly off the spoon.

    Spread the base out flat and drag both chutneys across it in ribbons.

    Flood the plate with yogurt, then season hard — masala from a height falls evenly.

    Bury it under the chaat masala, add the jewelled garnish, and get it to the table while everything still crackles.

Chef's tip

If the masala sticks, add water a tablespoon at a time rather than drowning the dish.
