Palak Leaf Pakoda

Spinach leaf pakoras, green confetti in crisp batter. Craggy, crisp and impossible to eat just one of. Plate with fried green chilies and a dusting of chaat masala.

Ingredients

  • Ginger Garlic Paste1 tsp
  • Saltto taste
  • Spinach300 g, chopped
  • Green Chili2
  • Turmeric Powder1/2 tsp
  • Vegetable Oilfor deep frying
  • Asafoetidaa pinch
  • Gram Flour1 cup
  • Ajwain1 tsp
  • Rice Flour2 tbsp

Instructions

    Combine the spinach with the gram flour and the flours; add water slowly — the batter should coat a spoon, not run off it.

    Warm the oil till a test droplet sizzles and floats at once; too cool and everything goes greasy.

  3. 3

    Fry in batches of six or so, nudging them apart; crowding drops the oil temperature and the crunch.

  4. 4

    Fry till deep gold, flipping once, then lift out and drain on a rack — paper towels steam the bottoms soft.

    Eat immediately — a fritter's glory is measured in minutes.

Chef's tip

Taste as you go — chili heat, salt and sourness should all lift each other, not fight.
