
Ukadiche Modak
Ganpati's favourite steamed modak, coconut-jaggery heart in soft rice shell. Ghee, sugar, patience — the three ingredients in every Indian celebration. Serve at room temperature, cut small — sweetness needs no size.
Ingredients

- Sugarto taste
- Rice Flour1 cup
- Grated Coconut1 cup
- Jaggery3/4 cup, grated
- Green Cardamom1 tsp

Measure everything before lighting the flame; there is no pause button mid-cook.

Combine the rice flour with the jaggery in a heavy-bottomed pan and begin cooking over medium heat, stirring constantly.

Keep going until the mass pulls away from the pan and glistens; the colour should deepen a shade.

Season the mix with the grated coconut and green cardamom, reserving some nuts for the top.

Tip into a greased tray, level the top, sprinkle nuts, and let it set before cutting into diamonds.

Don't crowd the pan; steam is the enemy of the browning that builds flavour.
