Kerala Neyyappam
Kerala ghee-fried appam with jaggery batter, unniyappam's bigger sibling. Festival sweetness, made the slow way. Best after resting an hour; the flavours settle.

Put the rice flour and jaggery on a steady medium flame and commit to stirring — sweets test your patience.

Keep going until the mass pulls away from the pan and glistens; the colour should deepen a shade.

Tip into a greased tray, level the top, sprinkle nuts, and let it set before cutting into diamonds.
