
Maharashtrian Sabudana Kheer
Pearl tapioca kheer, fasting-day dessert with saffron strands. Ghee, sugar, patience — the three ingredients in every Indian celebration. Serve at room temperature, cut small — sweetness needs no size.

Combine the sago (sabudana) with the milk in a heavy-bottomed pan and begin cooking over medium heat, stirring constantly.

Cook, stirring, until the mixture thickens and leaves the sides of the pan — 15 to 25 minutes of honest work.

Stir in the sugar with the cardamom; the aroma should bloom immediately.
