Lauki Aur Kesar Kheer
Bottle gourd kheer, the surprising dessert of UP weddings. The taste of every good news day in an Indian household. Best after resting an hour; the flavours settle.
Ingredients
- Salta pinch
- Ghee3 tbsp
- Milk1 litre
- Sugar1 tsp
- Bottle Gourd2 cups, cubed
- Green Cardamom1 tsp
Instructions
- 1
Set out every ingredient measured and ready; Indian sweets move fast once the heat is on.
- 2
Put the bottle gourd and milk on a steady medium flame and commit to stirring — sweets test your patience.
- 3
Cook, stirring, until the mixture thickens and leaves the sides of the pan — 15 to 25 minutes of honest work.
- 4
Season the mix with the sugar and green cardamom, reserving some nuts for the top.
- 5
Tip into a greased tray, level the top, sprinkle nuts, and let it set before cutting into diamonds.
Chef's tip
Ghee should be fragrant but never browned past golden.
