
Badam Kesari Halwa
Almond halwa, ghee-rich and wedding-gift golden. Festival sweetness, made the slow way. Best after resting an hour; the flavours settle.
Ingredients

- Ghee3 tbsp
- Milk1 litre
- Sugar1 tsp
- Almonds1/4 cup, blanched and slivered
- Green Cardamom4, ground
Instructions

Set out every ingredient measured and ready; Indian sweets move fast once the heat is on.

Start the base: the almonds and milk together in a thick pan, stirring so nothing catches.

Cook, stirring, until the mixture thickens and leaves the sides of the pan — 15 to 25 minutes of honest work.

Season the mix with the sugar and green cardamom, reserving some nuts for the top.

Shape or slice once it has cooled enough to handle; it firms up as it rests.
