Ingredients

  • Salta pinch
  • Ghee3 tbsp
  • Sugarto taste
  • Coconut Milk1 cup
  • Cashews1/4 cup
  • Wheat Flour3 cups
  • Jaggery3/4 cup, grated
  • Green Cardamom4, ground

Instructions

    Set out every ingredient measured and ready; Indian sweets move fast once the heat is on.

    Put the wheat flour and coconut milk on a steady medium flame and commit to stirring — sweets test your patience.

    Cook, stirring, until the mixture thickens and leaves the sides of the pan — 15 to 25 minutes of honest work.

    Add the jaggery, cardamom and any nuts or saffron; fold through and cook two minutes more.

    Spread or shape while warm, garnish with the reserved nuts, cool completely, then cut or serve as it sets.

Cardamom ground fresh from pods doubles the aroma.
