Kerala moong payasam in jaggery-coconut milk, sadya finale. Festival sweetness, made the slow way. Best after resting an hour; the flavours settle.

Ingredients

  • Salta pinch
  • Ghee3 tbsp
  • Sugarto taste
  • Coconut Milk1 cup
  • Jaggery3/4 cup, grated
  • Green Cardamom1 tsp
  • Yellow Moong Dal1 cup, rinsed

Instructions

    Measure everything before lighting the flame; there is no pause button mid-cook.

    Start the base: the yellow moong dal and coconut milk together in a thick pan, stirring so nothing catches.

    Cook, stirring, until the mixture thickens and leaves the sides of the pan — 15 to 25 minutes of honest work.

    Stir in the jaggery with the cardamom; the aroma should bloom immediately.

  5. 5

    Shape or slice once it has cooled enough to handle; it firms up as it rests.

Chef's tip

Cardamom ground fresh from pods doubles the aroma.
