Hyderabad's fried-bread pudding drowning in saffron milk. Ghee, sugar, patience — the three ingredients in every Indian celebration. Serve at room temperature, cut small — sweetness needs no size.

Ingredients

  • Salta pinch
  • Ghee3 tbsp
  • Saffrona pinch, soaked in warm milk
  • Milk1 litre
  • Sugar1 tsp
  • Bread4 slices
  • Green Cardamom4, ground

Instructions

    Measure everything before lighting the flame; there is no pause button mid-cook.

    Start the base: the bread and milk together in a thick pan, stirring so nothing catches.

    Keep going until the mass pulls away from the pan and glistens; the colour should deepen a shade.

    Stir in the sugar with the cardamom; the aroma should bloom immediately.

    Spread or shape while warm, garnish with the reserved nuts, cool completely, then cut or serve as it sets.

Chef's tip

If the masala sticks, add water a tablespoon at a time rather than drowning the dish.
