Tamil meen varuval, pepper-curry leaf fry with crisp edges. Fried fish done the way the coast intended. Serve with dal-rice or as a starter with chutney.

Ingredients

  • Ginger Garlic Paste1 tbsp
  • Saltto taste
  • Green Chili2
  • Turmeric Powder1/2 tsp
  • Curry Leaves2 sprigs
  • Lemon1
  • Fish500 g, steaks
  • Red Chili Powder1-2 tsp
  • Mustard Oil4 tbsp, for shallow frying
  • Black Pepper1 tsp
  • Semolina (Rava)4 tbsp, for coating

Instructions

    Dry the fish well, score diagonal slits, and season into every cut.

    Marinate 30 minutes with the black pepper, ginger garlic paste, chili and spices.

    Mix the coating: semolina or rice flour with a pinch of chili; press it onto the fish on all sides.

    Shallow-fry in hot oil, 4-5 minutes a side, till deep gold and crisp at the edges; drain on a rack.

    Eat immediately, straight from the rack if no one is watching.

Chef's tip

Pat bone-dry before the marinade or the crust slides off.
