Seer fish steaks fried Madras-style, meaty and chilli-red. Fried fish done the way the coast intended. Serve with dal-rice or as a starter with chutney.

Ingredients
- Ginger Garlic Paste1 tbsp
- Kashmiri Chili Powder1 tsp
- Saltto taste
- Green Chili2
- Turmeric Powder1/2 tsp
- Lemon1
- Fish500 g, steaks
- Red Chili Powder1-2 tsp
- Mustard Oil4 tbsp, for shallow frying
- Semolina (Rava)4 tbsp, for coating
Instructions

Wash and pat the fish absolutely dry; score the flesh and rub with lemon, salt and turmeric.

Rub the marinade of the ginger garlic paste and spices into the scores; rest it in the fridge.

Coat thickly — the craggy bits become the best part.

Cook on medium-high so the crust shatters and the inside just turns opaque.

Plate with the ginger garlic paste remnants fried crisp alongside, lemon and sliced onion.
Chef's tip
Don't crowd the pan; steam is the enemy of the browning that builds flavour.
