
Chingri Malai Curry
Bengali chingri malai, prawns in cardamom-scented coconut milk. Minutes from pan to plate, as the sea intended. Plate with lemon wedges and nothing to distract.
Ingredients
- Saltto taste
- Onion1, finely chopped
- Garlic4 cloves
- Ginger1 tbsp, minced
- Green Chili2
- Ghee3 tbsp
- Turmeric Powder1/2 tsp
- Vegetable Oil2 tbsp
- Curry Leaves1 sprig
- Lemon1
- Coconut Milk1 cup
- Prawns300 g, shelled and deveined
- Red Chili Powder1 tsp
- Green Cardamom1 tsp
Instructions

Clean the prawns carefully — shell, devein or scrub as needed — and pat completely dry.

Heat oil and fry the aromatics — onion, garlic, green chili — till soft and golden.

Add the coconut milk and spices; toast thirty seconds so they bloom in the oil.

Add the prawns and toss on high heat just till it changes colour and turns opaque.

Kill the heat, add the green cardamom and lemon, and serve while it still sizzles.
Chef's tip
A final squeeze of lemon or lime right before serving wakes up every other flavour.
