
Soya Chaap ki Sukhi Sabzi
Soya chunks pan-tossed in spiced yogurt till the edges crisp, Delhi's favourite vegetarian meat. Simple, spiced straight-talk food — no gravy to hide behind. Pile beside phulka and a bowl of cooled yogurt.
Ingredients
- Yogurt2 cups, whisked
- Ginger Garlic Paste1 tbsp
- Garam Masala1/2 tsp
- Kasuri Methi1 tbsp
- Saltto taste
- Onion1, finely chopped
- Tomato2, chopped
- Ginger2-inch piece
- Green Chili1-2, slit
- Cumin Seeds1 tsp
- Coriander Powder1 tsp
- Turmeric Powder1/2 tsp
- Vegetable Oil2 tbsp
- Soya Chunks1 cup, boiled
- Red Chili Powder1 tsp
Optional extras
- Fresh Cilantro2 tbsp, chopped
Instructions

Wash and cut the soya chunks into even, bite-size pieces so everything cooks at the same pace.

Heat oil in a wide kadhai and crackle cumin seeds; fry the onions till lightly golden.

Tip in the ginger garlic paste and green chilies, then the spices — fry until the oil separates at the edges.

Fold in the soya chunks with the yogurt, sprinkle in a tablespoon of water, cover and steam until just done.

Kill the heat, stir through the cilantro and the kasuri methi, and rest five minutes before serving.
Chef's tip
Taste as you go — chili heat, salt and sourness should all lift each other, not fight.
