
Methi Aur Aloo ki Sookhi Bhaaji
Fresh fenugreek leaves and potato, the classic methi aloo done dry and dhaba-style. The kind of homely bhaji that disappears fastest off the thali. Serve hot with rotis, dal and a wedge of lemon.
Ingredients
- Ginger Garlic Paste1 tbsp
- Garam Masala1/2 tsp
- Saltto taste
- Onion1, finely chopped
- Tomato2, chopped
- Ginger2-inch piece
- Green Chili1-2, slit
- Cumin Seeds1 tsp
- Coriander Powder1 tsp
- Turmeric Powder1/2 tsp
- Vegetable Oil2 tbsp
- Fenugreek Seeds2 cups, chopped
- Potato3 medium, cubed
- Red Chili Powder1 tsp
- Amchur (Dry Mango Powder)1 tsp
Optional extras
- Fresh Cilantro2 tbsp, chopped

Wash and cut the fenugreek seeds into even, bite-size pieces so everything cooks at the same pace.

Soften the onions in oil over a medium flame with a little salt until translucent and sweet.

Tip in the ginger garlic paste and green chilies, then the spices — fry until the oil separates at the edges.

Add the fenugreek seeds and the potato, toss to coat in the masala, cover and cook on low, stirring twice, until tender.

Finish with garam masala, cilantro and a knob of butter for gloss.
Chef's tip
Resting the finished dish for five minutes off the heat lets the spices settle and deepen.
