
Tori Aur Moong ki Bhaaji
Ridge gourd cooked soft with moong dal, light enough for a summer lunch. A one-pan weeknight sabzi that asks for little and gives a lot. Best mopped up with hot chapatis straight off the flame.
Ingredients
- Ginger Garlic Paste1 tbsp
- Garam Masala1/2 tsp
- Saltto taste
- Onion1, finely chopped
- Tomato2, chopped
- Ginger2-inch piece
- Green Chili1-2, slit
- Cumin Seeds1 tsp
- Coriander Powder1 tsp
- Turmeric Powder1/2 tsp
- Vegetable Oil2 tbsp
- Lemon1
- Red Chili Powder1 tsp
- Ridge Gourd2, peeled and diced
- Yellow Moong Dal1 cup, rinsed
Optional extras
- Fresh Cilantro2 tbsp, chopped
Instructions

Dice the ridge gourd uniformly, toss with a pinch of salt and let it sit while the masala comes together.

Soften the onions in oil over a medium flame with a little salt until translucent and sweet.

Add ginger garlic paste, cook out the raw smell, then bloom the turmeric, chili and coriander in the oil.

Add the ridge gourd and the yellow moong dal, toss to coat in the masala, cover and cook on low, stirring twice, until tender.

Finish with garam masala, cilantro and a knob of butter for gloss.
Chef's tip
Taste as you go — chili heat, salt and sourness should all lift each other, not fight.
