
Aloo Aur Hara Pyaz ki Sabzi
Potatoes tossed with a whole bunch of spring onion greens, a five-ingredient winter side. Simple, spiced straight-talk food — no gravy to hide behind. Serve hot with rotis, dal and a wedge of lemon.
Ingredients
- Ginger Garlic Paste1 tbsp
- Garam Masala1/2 tsp
- Saltto taste
- Onion1, finely chopped
- Tomato2, chopped
- Green Chili2
- Cumin Seeds1 tsp
- Ghee3 tbsp
- Coriander Powder1 tsp
- Turmeric Powder1/2 tsp
- Vegetable Oil2 tbsp
- Potato3 medium, cubed
- Spring Onions4, sliced
- Red Chili Powder1 tsp
Optional extras
- Fresh Cilantro2 tbsp, chopped
Instructions

Dice the potato uniformly, toss with a pinch of salt and let it sit while the masala comes together.

Heat oil in a wide kadhai and crackle cumin seeds; fry the onions till lightly golden.

Tip in the ginger garlic paste and green chilies, then the spices — fry until the oil separates at the edges.

Turn the potato through the masala with the spring onions, clamp on a lid and let the steam work — check after 10 minutes.

Uncover, raise the heat for two minutes to dry off any liquid, then shower with cilantro and a squeeze of lemon.

Don't crowd the pan; steam is the enemy of the browning that builds flavour.
