Corn shorba, sweet kernels in buttery broth. The Indian answer to soup night: shorba logic, butter texture. Ladle into warm bowls with a crack of pepper.

Ingredients
- Butter3 tbsp
- Saltto taste
- Onion1, chopped
- Garlic3 cloves
- Turmeric Powder1/4 tsp
- Milk1 litre
- Vegetable Stock4 cups
- Corn2 cups
- Black Pepper1 tsp
Optional extras
- Fresh Cilantro2 tbsp, chopped
Instructions

Chop everything to a similar size so the simmer is even.

Warm the butter, add onion and garlic, and let them soften slowly.

Stir the corn and milk through the pot with the spices for a minute.

Pour in the stock, bring to a boil, then simmer covered 20 minutes till everything is spoon-tender.

Blend smooth (or leave rustic), adjust the seasoning, and serve hot with a swirl of cream and pepper on top.
Chef's tip
Don't crowd the pan; steam is the enemy of the browning that builds flavour.
