Arbi Aur Palak ki Bhaaji

Taro cubes tossed with wilted spinach and garlic, a iron-rich winter pairing. Simple, spiced straight-talk food — no gravy to hide behind. Serve hot with rotis, dal and a wedge of lemon.

Ingredients

  • Ginger Garlic Paste1 tbsp
  • Garam Masala1/2 tsp
  • Saltto taste
  • Spinach300 g, chopped
  • Onion1, finely chopped
  • Tomato2, chopped
  • Garlic6 cloves
  • Green Chili1-2, slit
  • Cumin Seeds1 tsp
  • Ghee3 tbsp
  • Coriander Powder1 tsp
  • Turmeric Powder1/2 tsp
  • Vegetable Oil2 tbsp
  • Red Chili Powder1 tsp
  • Taro (Arbi)300 g, boiled and peeled

Optional extras

  • Fresh Cilantro2 tbsp, chopped

Instructions

    Pat the taro (arbi) dry and chop it into similar-sized chunks — dry surfaces brown better.

    Warm the oil, add cumin and a pinch of asafoetida, then the onions — cook till bronzed at the edges.

    Stir in ginger garlic paste and green chili; after a minute add the ground spices with a splash of water so they don't scorch.

    Fold in the taro (arbi) with the spinach, sprinkle in a tablespoon of water, cover and steam until just done.

    Kill the heat, stir through the cilantro and the garlic, and rest five minutes before serving.

Chef's tip

If the sabzi tastes flat, it usually wants salt and lemon, not more chili.
