
Gobhi Aur Sarson ki Bhaaji
Cauliflower florets crackled with mustard seeds, the Bengali-to-Punjabi bridge dish. Simple, spiced straight-talk food — no gravy to hide behind. Pile beside phulka and a bowl of cooled yogurt.
Ingredients
- Ginger Garlic Paste1 tbsp
- Garam Masala1/2 tsp
- Saltto taste
- Onion1, finely chopped
- Tomato2, chopped
- Green Chili2
- Cumin Seeds1 tsp
- Coriander Powder1 tsp
- Turmeric Powder1/2 tsp
- Vegetable Oil2 tbsp
- Mustard Seeds1 tsp
- Cauliflower1 small, in florets
- Lemon1
- Red Chili Powder1 tsp
Optional extras
- Fresh Cilantro2 tbsp, chopped
Instructions

Pat the cauliflower dry and chop it into similar-sized chunks — dry surfaces brown better.

Heat oil in a wide kadhai and crackle cumin seeds; fry the onions till lightly golden.

Tip in the ginger garlic paste and green chilies, then the spices — fry until the oil separates at the edges.

Fold in the cauliflower with the mustard seeds, sprinkle in a tablespoon of water, cover and steam until just done.

Finish with garam masala, cilantro and a knob of butter for gloss.

Don't crowd the pan; steam is the enemy of the browning that builds flavour.
