
Tamatar Shorba
Tomato shorba, Mughlai soup with cream swirl and pepper. The Indian answer to soup night: shorba logic, butter texture. Best with a drizzle of cream and warm bread.
Ingredients
- Butter2 tbsp
- Heavy Cream1/4 cup
- Saltto taste
- Onion1, chopped
- Tomato3, chopped
- Garlic3 cloves
- Ginger2-inch piece
- Turmeric Powder1/4 tsp
- Vegetable Stock4 cups
- Black Pepper1 tsp
Optional extras
- Fresh Cilantro2 tbsp, chopped
Instructions

Get the tomato and vegetables ready; soups are prep-heavy, cook-light.

Warm the butter, add onion and garlic, and let them soften slowly.

Add the tomato and heavy cream with the spices; stir two minutes to coat in the fat.

Add the stock, boil, then lower to a murmur until the vegetables yield easily.

Blend smooth (or leave rustic), adjust the seasoning, and serve hot with a swirl of cream and pepper on top.
