
Imarti Aur Saffron
Flower-shaped imarti soaked in saffron syrup, jalebi's thicker Rajasthani cousin. Ghee, sugar, patience — the three ingredients in every Indian celebration. Serve at room temperature, cut small — sweetness needs no size.

Start the base: the urad dal and sugar together in a thick pan, stirring so nothing catches.

Stir through the long middle stage until the mixture looks cohesive and smells toasty and rich.

Add the saffron, cardamom and any nuts or saffron; fold through and cook two minutes more.

Tip into a greased tray, level the top, sprinkle nuts, and let it set before cutting into diamonds.
